Bacon Wrapped Avocado - A Delicious and Wet Culinary Dream!!!

When inspired, you can't resist especially when it relates to food!!!  This is not my recipe, but it is up my alley...  OMG...  I'm ready to run to the grocery store for the ingredients before going to bed tonight!!!

Recipe: Bacon-Wrapped Avocado Wedges

Thursday, January 26, 2012

There is laundry all over my living room floor. It's clean, but it's taking up space because as I write this, it's still a little damp. The dryers in our apartment complex just don't do their job, and every time we end up with damp laundry. For just one more dollar, we could have dry laundry, but I don't want to encourage bad behavior. And sometimes, I'm out of quarters.

But it's okay, because there are things like bacon and avocados in my refrigerator. And that's really all you need.

Make these when things are acting a lot more complicated than they need to be.

Ingredients:
Bacon
Avocado(s)
Optional:
Salt, Lime, Cayenne Powder

1. Slice and peel your avocado. You should get 6 to 8 wedges from each.
2. Wrap a slice of bacon around each wedge! If you're fancy, use a toothpick to hold them together. If you're me, just stick them in the pan edge-side down and hope for the best.
3. Cook them in a hot pan until they're nice and crispy. You'll have to turn them a couple times to get it cooked on all sides. I'm sure you could do this part in the oven, but I'm not sure how hot or for how long.
4. Finish them off with a tiny sprinkle of kosher salt or lime juice + cayenne.

Eat these for lunch. Make them again for an appetizer before dinner. Fold your laundry.

78261 Is San Antonio's Highest Per Capita Zip Code

An article came out back on December 27th, 2012 stating that 78261 is now the highest per capita zip code in San Antonio.  I just wanted to share that article once again...  see below:

Money Moving North, Northwest in Latest Report on Bexar's Richest ZIP Codes

  There goes the neighborhood.

The 78209 ZIP code, which has long been the stereotype of smug affluence in Bexar County, isn't even in the top 25 of the new list of the wealthiest ZIP codes in Bexar County, according to the Census Bureau.

The wealthiest ZIP code in Bexar County today is 78261, which is east of US 281 and north of TPC Parkway and the J.W. Marriott Resort in the far north central portion of the county, along Smithson Valley Road.  The average income in the ZIP code, according to the US Census, is right at $92,000 a year.

Right behind is 78258, which is south and west of 78261, west of US 281, and including Sonterra and much of Stone Oak.  It has an average income of $91,000.

Number three is 78248, which is the only one of the top earning ZIP codes inside Loop 1604.  It includes Inwood, Deerfield, and Churchill Estates.

Both of the next two top earning ZIP codes are on the far northwest side, 78257, which includes The Dominion, and 78255, which includes Scenic Oaks.  Both have an average income of about $88,000.

As evidence of the migration of wealth to far north Bexar County, only one of the high dollar ZIP codes is inside Loop 1604, and it doesn't stretch south of Huebner Road.  Like 78209, which takes in Terrell Hills and much of Alamo Heights and has put the expressions "09 and "09er" into the local slang, other districts which have lost their super wealthy cachet include the Oak Hills neighborhood along Fredericksburg outside Loop 410, and the King William area just south of downtown.

These neighborhood still include high dollar enclaves, but the entire ZIP code has expanded to include more middle class neighborhoods which drive down the average incomes.
